Caramelised white chocolate, local strawberries & almond clusters

Try this dinner party dessert from Darral Warner, head chef at the Ebrington Arms

Ingredients for the Almond Clusters

  • 1 egg white
  • 100g almond flakes
  • Pinch of cinnamon

Method for the Almond Clusters

  • Whisk up the egg white, add a tablespoon of sugar and whip till firm
  • Dust the almonds with cinnamon and fold into the whipped egg white
  • Spread onto a baking tray and bake at 170°C for 8-10 minutes
  • Leave to cool and break into pieces

Ingredients for the Caramelised White Chocolate

  • 340g white chocolate
  • 400g double cream
  • 5g gelatine
  • 10g glucose syrup
  • 200ml milk

Method for the Caramelised White Chocolate

  • Set oven to 140°C
  • Put the chocolate on a baking tray and put in oven for 30 minutes, lightly stirring half way through; the chocolate will start to turn dark brown (almost burnt)
  • Put the gelatine in a little water to soften up
  • Put the milk and glucose syrup in a pan and heat up
  • Add gelatine and stir till dissolved then add the white chocolate and mix. The white chocolate will set so put the mixture into a blender and blend till smooth
  • Pass through a fine sieve into a mixing bowl and leave to cool
  • Lightly whip the cream and when the chocolate mix is cool, fold in the cream carefully
  • Pour into a tub and put in the fridge

To Serve

  • Cut up some strawberries, quenelle (create a swirl with the back of a spoon) the caramelised white chocolate and sprinkle some almond clusters over. Garnish with some fresh mint leaves.
