Slow cooker beef brisket

Cheaper cuts of meat such as brisket are fantastic cooked long and slow. This can be done in a conventional oven on a low setting but is easier and more cost effective if you’ve got a slow cooker – simply pop the lid on and off you go! Once the pot has worked its magic, you’ll be rewarded with a meltingly tender piece of meat and a rich, unctuous gravy – just the thing to beat those January blues!

INGREDIENTS

Slow cooker beef brisket

1.2kg brisket, rolled

2 tbsp vegetable oil, plus extra for drizzling

2 large onions, sliced

4 tbsp plain flour

1 tbsp dark brown soft sugar, plus extra to taste

1 tbsp chipotle ketchup, plus extra to taste

1 tin chopped tomatoes

500ml red wine

500ml beef stock

Seasoning

METHOD

Season the meat well and rub with oil. Sear in a hot pan until browned. Remove, then gently fry the chopped onions until soft.

Return the meat to the pan and add the flour to coat. Place everything in a slow cooker (or heavy based casserole dish). Add the rest of the ingredients, making sure there is enough liquid to cover the meat.

Allow to cook for up to 8 hours in the slow cooker. If using the oven, set the temperature to 100 degrees and slow cook, checking every hour or so.

Once the meat has finished cooking and is moist and tender, remove and set aside. Simmer the remaining ingredients to create a thick, rich gravy, tasting as you go.

TO SERVE

Serve slices of meat with with creamy mashed potato and buttered baby carrots
