Souper soups!

When it comes to boosting your immunity and your bank balance, nothing beats a bowl of homemade soup. These winter warmers have got all corners covered – they perk you up when you’re feeling down, are a great way to combat food waste and you can adapt them to use up any food that is in season. Here are some of our favourites:


The mood booster: tomato and basil

Like sunshine in a bowl, this bright red soup can lift the mood thanks to a healthy dose of vitamin C and fresh herbs. Plus, it couldn’t be simpler to make – simply fry off a chopped red onion with chopped garlic and celery, add a punnet of cherry tomatoes, a tin of plum tomatoes and some stock to add volume. Add a couple of handfuls of chopped basil and allow to simmer until everything is well combined. Whizz and serve with a spoonful of crème fraiche or basil pesto swirled on top.

Immune support: chicken and vegetable soup

According to reports, the simple chicken soup is a ‘souper food’ when it comes to warding off winter colds and flus. Whether there’s any truth in the claims, we can’t say, but there’s no doubt this easy meal is delicious as well as nutritious. Plus it’s a great way of sing up left over chicken from the Sunday roast. To begin, fry off an onion, carrot, celery sticks and garlic cloves until soft. Season then add your favourite herbs – thyme, bay, rosemary – followed by a couple of litres of chicken stock. Finish by adding cooked shredded chicken and noodles and simmer until the noodles are soft and the flavours are rounded.

The hug in a bowl: leek and potato soup

Comforting carbs are in abundance in this mood-boosting soup and it couldn’t be simpler or more economic to make. Fry off an onion and chopped potatoes, then add chopped leek, garlic and plenty of stock and allow to simmer until the potatoes are soft. Whizz to your desired consistency before returning to the pan. Stir in a small tub of cream or crème fraiche to taste.

A meal in one: Tuscan bean soup

Also known as ribollita, this hearty dish is more of a stew than a soup thanks to the generous quantity of white beans. You can make this dish your own by adding your favourite ingredients but you’ll generally always find onion, carrot, celery, garlic, tinned tomatoes, and stock as well as herbs such as thyme and rosemary and a pinch of chilli flakes or smoked paprika. White beans (these can be cannellini or flageolet or a mix of the two) are the other classic ingredient. Canned beans are fine although you may prefer the texture and flavour of using dried beans.

Store cupboard favourite : curried parsnip soup

This tasty soup uses parsnips as the main ingredient but then you can play with whatever spices you have in your spice rack. The secret is to fry the chopped onion and parsnip together in melted butter for about 10 minutes before adding your spice – curry powder, cumin, cinnamon, turmeric all work well and dry frying for a minute. Add the stock slowly then allow to simmer until the parsnip is cooked through. Serve with creme fraiche and toasted pumpkin seeds.
