It started in 2005 with a dream to produce a Cotswold brie using organic milk. Today, Simon Weaver Organic produces a number of multi award-winning cheeses and is at the the forefront of the field to fork farming with nature revolution. Here’s their story:

The Weavers have been farming in the Cotswolds for three generations, and in the South West of England since before 1570.

They proudly follow a traditional method of organic farming and place great store in caring for land and animal welfare. Their closed organic herd enjoy a forage-based diet, and their milk production is not forced. The Weavers know that ‘if our girls are happy, our cheeses will taste great too.’

The cows are put to pasture at Greystones Farm near Bourton-on-the-Water, an important nature reserve for wildlife and archeology. Working alongside Gloucestershire Wildlife Trust, the Weavers farm in a way that positively impacts meadow health and biodiversity.

They also aid in archaeological preservation, restoration efforts with GWT, and support the unique ecosystem within the meadows. This symbiosis ensures the meadows thrive, whilst providing hay as winter sustenance for the dairy herd and preserving precious biodiversity.

The herd consists of 75 milking cows that graze freely on the lush meadows surrounding the farm in the summer months. These cows play a central role in producing quality organic milk that forms the foundation of the cheese.

The installation of a revolutionary robotic milker means that the cows are not put under stress when milked, which  further highlights the family’s dedication to ethical and environmentally friendly farming methods. This ties in with the Weavers’ aim to deliver delicious dairy products while prioritising the well-being of their animals and the preservation of the natural beauty of their surroundings.

All of the cheese is made by hand, giving a true definition to the term ‘artisan’. As well as being pasteurised, vegetarian, and of course 100% organic, many of the cheeses are multi award-winning.

The Cotswold Blue Veined Brie is a two-time Silver medallist and a Highly Commended finalist at the Artisan Cheese Awards; the Herb Brie won Gold at the Bath and West British Cheese Awards; the Single Gloucester is a multi-time medallist at the Artisan Cheese Awards and won Bronze at the Bath and West British Cheese Awards; the Truffle Gloucester won Gold at the Bath and West British Cheese Awards, Silver at the Artisan Cheese Awards and was voted Best Cheese at the Cotswold Life Food & Drink Awards.

Single Gloucester

Simon Weaver joined forces with the Gloucestershire Wildlife Trust to make a new Organic Single Gloucester cheese using Gloucester cattle that graze the Trust’s Greystones Farm Nature Reserve in Bourton-on-the-Water. Gloucester cattle are essential in the day to day management of the farm and the safeguarding of its wild flower meadows and wildlife. Single Gloucester cheese has a Protected Designated Origin, and must be made in Gloucestershire using milk from Gloucester cattle. Simon Weaver is one of only five producers in the world to make this particular cheese.

Cheese Tasting: this handcrafted, natural rind cheese, has a light, crumbly texture with a creamy flavour.

Truffle Gloucester

Take the award-winning single Gloucester cheese and infuse it with minced Black Summer Truffles (Tuber Aestivum) and you get the award-winning Truffle Gloucester. The cheese has a striking line of black truffle running through the middle, which allows both the cheese and the black truffle to express their natural complexities, without overpowering each other.

Cheese Tasting: beautifully firm and crumbly in texture, this cheese hits the perfect balance between the mellow single Gloucester and earthy Black Truffle flavours.

Cotswold Blue Veined Brie

Using the original Organic Cotswold Brie as a starting point, this soft white moulded cheese has a Roquefort blue mould running through the centre. It can be eaten traditionally with bread and wine, but it is wonderful with a fresh pear. It has become increasingly popular with local chefs for its versatility, be it in salads, melted on steaks, or just simply at the end of the meal on a cheese board accompanying local chutneys, relishes and seasonal fruit.

Cheese Tasting: it has a delicious creamy texture, with a fresh clean taste that develops as the cheese ages into a rich aromatic piquancy.

Cotswold Herb Brie

Cotswold Herb is the Organic Cotswold Brie infused with a blend of organic herbs, picked for their delicate and complementary flavour. The Organic Cotswold Herb Brie is fresh and uplifting, and ideal for those who want to enjoy their cheese with a little something extra, without it becoming overwhelming.

Cheese tasting: it has a gentle, subtle taste with a lingering herb after taste.
