Working to an original recipe handed down by their mother, Muriel Morrissey, daughters Lisa and Jan have been perfecting their techniques to bring us the perfect meringue.
Being able to produce shop-bought meringues on a mass scale that are crispy on the outside yet chewy in the middle is key to their success. The secret? Use eggs that are not too fresh and add brown sugar at exactly the right time.
Despite making 1000s of meringues each week, the products are still carefully handmade. This attention to detail has won Cotswold Handmade Meringues a number of repeat customers, with their products being sold in shops and food markets in Gloucestershire and other counties.
Meringues make for an incredibly versatile dessert so it was important for Lisa and Jan to develop a number of innovative products. These include meringue whirls and nests in a number of flavours such as hazelnut, coconut, dark chocolate and cinnamon. Other products include mini meringue bites, and round meringue bases, ideal for pavlova.
