Apple and blackberry gluten free crumble

Nothing says autumn like a hot fruit crumble! This easy to prepare dish can be made using whatever fruit is in season, such as plums, pears and apples, making it a great value dessert, especially when there are crowds to feed. Even better if you can forage fruit from your own garden or hedgerows – blackberries and elderberries are delicious additions. It can also be made in advance and frozen so you can reap the benefit of autumn’s harvest throughout the winter too!

INGREDIENTS

Gluten free crumble

75g gluten free plain flour

25g ground almonds

25g gluten free rolled oats

25g butter

25g soft brown sugar

Fruit filling

6 eating apples

punnet of blackberries

knob of butter

spoon of honey

METHOD

To make the crumble, rub all the crumble ingredients together using your fingertips or a food processor. It should resemble bread crumbs so don't over mix.

Make the fruit filling by peeling, coring and chopping the apples into chunky pieces. Add to a pan with the butter and honey and a glug of water. Gently simmer until soft but still retaining some bite.

Spoon the filling into an oven-proof dish and add the blackberries. Mix to ensure an even spread of each.

Top with the crumble mixture. Sprinkle with extra oats or flaked almonds for decoration. Bake in a hot oven for 30 minutes or until the top is golden and the fruit filling is bubbling. Leave to rest before serving.
