Panzanella
This Italian classic salad dish comes from Tuscany where simple, country cooking rules supreme. This simple recipe shows that when you have great ingredients, you don’t need much else. It works best when the tomatoes are extremely ripe and sweet so try to buy the best you can. Feel free to add to this basic recipe with other ingredients that take your fancy – sweet peppers, mozzarella cheese, capers, rocket and crunchy lettuce all work well.

Panzanella
1 x La Parisienne campagne loaf, torn
1 punnet ripe cherry vine tomatoes
1 x cucumber, chopped
1 x red onion, finely sliced
Bunch oregano, chopped
Olive oil
Handful basil, torn
Salt & pepper to taste

TO SERVE
This is an easy dish to prepare in advance at big gatherings such as a picnic or at a BBQ. Place in a large serving bowl and serve alongside fish, chicken or other foods. Chef's tip: Use one-day old or stale bread for best results.
